Alisa Melville and Caitlin Carney were graduate students at the University of Denver Korbel School of International Studies and Katie O’Toole was a pre-physician’s assistant student from Florida. They joined us for a month to develop a patient educational program in carbohydrate nutrition. Their program had didactic and practical components. They tracked 85 patients with type 2 diabetes through the teaching components. They made home follow-up visits to complete 24-hour dietary histories and evaluate patients’ capabilities to count carbohydrates and distinguish simple and complex carbohydrates. We still use their teaching program and their 24-hour dietary history forms in our clinic.
